CHARACTERISTICS:
Grapes harvested at a later stage in order to reveal the full
potential of this varietal in its relation with the natural
ripening/acidity and the granitic soils.
Manual harvest into small perforated crates. Reception with a
complete destemming.
Alcoholic fermentation carried out in stainless steel tanks under
controlled temperature, followed by a malolactic fermentation in
used 225l american and french casks, where it matured for about
6 months.
